Smoked Salmon Spinach Crepes...Thanks Mom!

My mom gave us some smoked salmon for the holidays and we immediately thought of making savory crepes. After going to the store to buy eggs for the crepes (and buying everything except for the eggs), we got some eggs from my mom too and cooked up this treat.
We used a recipe similar to this one from allrecipes.com: Crepe Recipe. We used our Bed Bath & Beyond crepe maker that we got as a wedding gift.
Inside of this scrumptious crepe, Lindsay put some pesto, the smoked salmon, gouda cheese, and fresh spinach. She sprinkled some mozzarella cheese on the top for garnish (and taste).
Thanks for the smoked salmon (and eggs) Mom!

Dessert was a small dish of fresh blackberries (also from my mom) drizzled with sweetened condensed milk & powdered sugar.
